As I looked through all the flavors I received from New Orleans Ice Cream Company, their Lemon Doberge Cake immediately caught my attention. The Red Velvet Cake variation using their Creole Cream Cheese base had been excellent, but my taste buds usually aren’t too fond of the sour fruit used in this one. They describe this flavor as a twist on a New Orleans dessert classic that has tangy lemon sauce and real lemon cake in our citrus lemon ice cream. After reading the description, words like tangy and citrus have my taste buds bracing for the worst. The first layer is light in color and shows off a few stripes of the lemon sauce as well as a multitude of cake crumbs.
The citrus lemon base goes light on the tartness and focuses mainly on sweetness. This dense, super-premium base is slow melting, flavorful and acts as the perfect host for the rest of the lemon-based mix-ins. With such a beautiful balance of sweet and sour, it avoids being overpowering and still provides that refreshing feeling you’d expect from a fruit-inspired ice cream. Just as they did in Red Velvet Cake, New Orleans Ice Cream Company have blended up big chunks of real lemon cake inside. Some of the crumbs from the larger pieces have made their way into every bite, which gives the citrus lemon base an incredible texture. The taste and texture is only amplified when I start running into the whole hunks and strings of the tangy lemon sauce.
The larger pieces of cake immediately leave me longing for a slice of the authentic dessert. These fragments add a burst of sweet lemon flavoring and a crumbly richness to the bites that already feature some of the smaller particles. The granulated, chewy texture it gives to the citrus lemon ice cream is top-notch and has grown to become something I really appreciate in a flavor. Where the cake adds some sugar to the balanced base, the tangy lemon sauce is enough to settle the score. The sourness provided by this petite, bright yellow swirl perfectly finishes off another one of the cake-based offerings from New Orleans Ice Cream Company.
