Roasted Vegetables + Chickpeas with Lemon-Cannellini Sauce

This recipe is adapted from one of the very first vegan meals I used to make on a regular basis when starting my new lifestyle. This was before I started blogging and then was off trying everything else I could. Nice to come back to this recipe once again. I have only slightly changed it from the original by adding chickpeas for boost of protein and texture, as well as mixing up the veggies a bit. The original recipe can be found here on One Green Planet by its author Robin Robertson. I love this recipe because of the versatility and ease. The vegetables can be pretty much anything you like. Use red or Yukon gold potatoes in place the sweet potato, just be sure to use about 2 cups worth. You can add, or sub in, butternut squash, pumpkin or any other winter squash you might like. You may like to add earthiness by using cubed beets. Try cauliflower florets in place of broccoli. Really anything goes here. As for the sauce, I find it's not something to write home about on its own but that changes once added like gravy to the top of your vegetables and grain, all the flavors come together and you'll be in comfort food heaven! This recipe is easy to pull together and makes for a great hearty meal in these cooler months. It's full of protein and fiber, is low in fat and has plenty of essential nutrients needed to maintain a healthy plant based diet!

Roasted Vegetables + Chickpeas with Lemon-Cannellini Sauce

Roasted Vegetables + Chickpeas with Lemon-Cannellini Sauce

Ingredients (serves 4-6)
  • 1 large sweet potato, cut into 1 inch cubes
  • 2 cups broccoli florets
  • 2 large carrots, sliced
  • 2 cups brussels sprouts, halved lengthwise
  • 1 onion, sliced (use your favorite onion or what you have on hand)
  • 1 can (15 oz.) garbanzo beans (chickpeas), drained  and rinsed
  • 1 tablespoon olive oil
  • mineral salt & fresh cracked pepper or lemon-pepper, to taste
  • 2 -3 cups cooked quinoa or grain of choice (about 1/2 cup per person)
Sauce
  • 2 cans (15 oz.) cannellini beans, drained and rinsed
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 3/4 - 1 cup vegetable broth (start low and add as needed)
  • juice of 1 good size lemon
  • generous pinch of red pepper flakes
  • mineral salt, to taste
  • 1 tablespoon fresh chopped basil, thyme, parsley, chives, sage, tarragon 

Preheat oven to 425 degrees F.

Line roasting pan/baking dish with silpat, parchment paper or grease lightly with neutral oil. Add vegetables to roasting pan and toss to coat with olive oil. Arrange vegetables in a single layer (as much as possible), sprinkle with salt and pepper to taste. Roast vegetables until tender and lightly browned, about 45 minutes, mixing once halfway through.

Start your grain of choice while vegetables are cooking. Quinoa will take about 30 minutes.

Prepare your sauce by placing all the ingredients into your food processor/blender, except for the herbs, and process until smooth. Add extra broth as needed to thin. Add in herbs and pulse once or twice. Place sauce in a small saucepan and heat over low heat, uncovered, until warm, stirring occasionally.

Serve vegetables over grain of choice with a nice helping of sauce over top. Serve warm.

Serves 4 generously.

Store leftovers in refrigerator for up to a week. Leftovers are just as delicious!

Stuffed Winter Squash + Quinoa, Cranberry & Pistachio

This is the time for winter squashes and all their wonderful flavors. These stuffed squashes would make for a pretty presentation on any holiday table, or simply enjoy anytime during the season for a flavorful and filling meal. This recipe can be dressed up fancy or kept simple, depending on your mood or occasion. Keep it to a few ingredients while adding more to add complexity to the dish. I've made this with just six ingredients (squash, quinoa, cranberries, pistachios, oil and salt) and it was great, adding a few other components give it more depth and flavor. This recipe is more of a template for you to create a quinoa stuffing to your liking. I encourage you to play around with the ingredients adjusting to your personal tastes.

I decided to do both the acorn and delicata squash with this because they both work so well here. You can use one or the other, or both for variation at the table. I love the delicata squash because the skin is edible. The acorn squash on the other hand may have a tougher, and possibly bitter, skin making it less likely that you'll be able to eat it but it does make for a great bowl. So either way, they both are great and can cook together if doing both.

Quinoa is my favorite grain, well technically it's a seed but can be prepared like a grain. It's a complete protein, full of fiber and a good source of calcium, magnesium and iron making it a great alternative to grains. And it's gluten free. It's perfect for those on a plant based diet and those seeking nutritionally dense foods. Served warm or cool, quinoa tastes great and is such a versatile grain. Here I used a blend of pearl and tri-colored quinoa. I like blending the two so there is just a few specks of the darker quinoa.

Add in some festive colors from the pistachios and cranberries and this dish is as appealing looking as it is good, and good for you!

Stuffed Winter Squash + Quinoa, Cranberry & Pistachio

Ingredients
  • 2 large or 3 small acorn or delicata squash
  • maple syrup
  • olive oil
  • 1 cup quinoa, rinsed well 
  • 1 3/4  cup water
  • 1/2 cup dried cranberries
  • 1/2 cup pistachios
  • 2 tablespoons finely minced shallot, optional
  • mineral salt & freshly ground pepper to taste
  • juice of 1 lemon

add complexity to the quinoa by adding one or more of the following to suit your taste:
  • pinch red pepper flakes
  • 1/2 cup chopped parsley (if your a mint fan, try 1/4 cup fresh mint)
  • 1 - 2 teaspoons fresh thyme 
  • drizzle of olive oil

Preheat oven to 375 degrees F.

Wash and dry squash. Slice each squash in half lengthwise, remove seeds. The seeds should come out easily by scraping the inside of the squash with a spoon. Lightly brush the inside of each squash with a little oil and/or maple syrup. sprinkle with a bit of mineral salt. Place on baking sheet cut side up. Bake in oven for 35 - 40 minutes, or until squash is tender and pierces easily with a fork.

While squash is cooking add 1 3/4 cup water and 1 cup quinoa to a medium size pot. Bring to a boil, cover, reduce heat to low and simmer for 15 minutes. Remove lid and let set 15 minutes. Add pistachios, cranberries, shallots, salt, juice of lemon, and any other optional ingredients. Toss to combine.

Scoop quinoa into squash halves, place back in the oven for 10 minutes to warm if needed, and serve.

Notes: 

For the quinoa I used a blend of 1/2 cup white and 1/2 cup tri-color quinoa. Feel free to use all of one type or mix and match to your preference.

Seek out organic cranberries if possible. Unsweetened is best but can be hard to find. The ones I have here are from Trader Joe's which are organic but sweetened.

    Life has been very slow lately. I think it must be this time of year and changing season that has slowed me down. I'm not complaining, in fact I quite like it. It's given me a chance to really practice my yoga, spend time with my kids and bake a lot of loafs of bread, mainly these pumpkin and banana breads. I'm obsessed with them at the moment and they've both been amazing recipes, even when making new alterations that I've also added to the notes. Winter hasn't set in yet but I'm prepared for when it does. Between easy vegetable bowls, like the one I'm sharing here which can work for lunch or dinner, and my breads, that I eat in the morning and as a snack or dessert, I'm ready for the cooler months to come. And if you're anything like me...you'll appreciate the simplicity and beauty of this roasted nourish bowl. Late last spring I shared this Everyday Nourish Bowl which is full of fresh vegetables. I thought it'd be a good idea to have a roasted version here too so you can get an idea of, and be tempted by, all the goodness it has to offer. Even in the cooler months, the freshness of the everyday nourish bowl would be great. But really the roasted version is so delicious and perfect for the cooler months. Enjoy every bite...be warm and nourished!

    ROASTED NOURISH BOWL

    Simply chop your veggies, add them and your beans to a roasting pan, toss in a little oil (or not), add a little salt & pepper and roast. Once done your vegetables should be nice and browned on the edges and fork tender. Feel free to use more or less of the vegetables I have listed. If you can't get them all in that's ok, a various few of the veggies called for will be enough. You can also change up the beans if you like, maybe use another white bean like cannellini or great northern. Other beans have slightly more protein and fiber than chickpeas so if you're looking to get the most protein I'd suggest changing them up.

    Makes a perfect complete meal once you add a grain like quinoa and some fresh spinach. A nice big dollop of hummus and you're all set for a hearty, nutrient dense meal. So much to love about bountiful nourish bowls!

    Ingredients
    • olive, grapeseed or coconut oil, 1 - 2 tablespoons
    • 1 large sweet potato, cut into 3/4" cubes
    • 2 large carrots, sliced
    • 1 1/2 cups brussles sprouts, halved or quartered
    • 1 1/2 cups broccoli florets
    • 1/2 large red onion, sliced
    • 6 serrano chilis, sliced in half and de-seeded 
    • 1 1/2 cups cooked chickpeas or 1 can (15oz) drained and rinsed
    • 1 - 2 lemons, cut into six pieces
    • mineral salt & fresh cracked pepper, to taste

    To serve
    • 1 1/2 cups cooked quinoa
    • 5 oz. spinach
    • 1 - 2 avocados
    • big dollop of hummus
    • red pepper flakes, to garnish
    • hemp hearts, to garnish


    Preheat oven to 400 degrees F.

    Prepare vegetables: remove any unsightly spots on the sweet potato skins before cubing, peel the carrots if needed and half or quarter the brussels sprouts depending on the size.

    Place vegetables, chickpeas and lemon in a large roasting pan or rimmed baking sheet. Toss with oil and sprinkle with salt & pepper to taste. Roast for 40 - 45 minutes, stirring half way through. Vegetables should be slightly browned on the edges and fork tender. Remove from oven and let cool a few minutes. If you have a favorite herb or herb blend, you may consider adding a dash or two before roasting.

    In individual bowls, serve vegetables with 1/2 cup quinoa, handful of spinach, sliced avocado and a nice dollop of hummus. Top with a sprinkle of red pepper flakes, hemp hearts a squeeze of roasted lemons.

    Serves 6.

    Notes: 

    Vegetables can vary in quantity. Add or subtract to your liking.

    Serrano peppers are optional. I personally love the heat they give and they are wonderful roasted! You can sub 3 jalapeno peppers as well.

    If you don't have hummus on hand or want to vary it up, try using these dressings and sauces instead: Lemon-Tahini Dressing, Sriracha Cashew Sauce, tahini based Dynamite Sauce or Creamy Tahini Hippie Sauce, For a non-creamy dressing, try this Shallot Vinaigrette.

    Cooking quinoa: I had a comment about cooking quinoa so here is my recipe for perfect quinoa.

    In a medium size pot, bring 1 3/4 cup water + 1 cup quinoa to a boil, cover, reduce heat to low and simmer for 15 minutes. Once done, turn off heat, remove cover, fluff with fork and let set 10 - 15 minutes.

    Perfect quinoa every time! Makes about 3 cups. Feel free to add a little seasoning to the quinoa before cooking like garlic powder, thyme, garlic salt, mineral salt, lemon pepper, everyday seasoning, etc. Or simply season once done. This will give you more than called for in the recipe...leftovers can be served chilled or warmed with your favorite vegetables or fruits.

    A little sweet, a little tart and a then a little more sweet...this quinoa salad is a wonderful mix of flavors and sensations.

    And then if it couldn't get any better, in comes the sweet tahini dressing...

    Without the dressing this salad can stand alone, especially with a nice hint of the cinnamon. But let me tell you, a good drizzle of this dressing adds whole new layer of yum factor. This is my first time having this sweet tahini dressing and I was amazed at how good it tasted. It's a wonderful creamy sweet dressing that so easy to make. The sesame paste isn't bitter here at all and mixes very well with sweetness. It would make for a nice twist on the Waldorf Salad. Yes, more ways to use tahini! I am now officially addicted to this new find. I also found myself using it as a dip for sliced apples. So good...better than caramel with apples I think! It has a unique flavor that I cannot explain, it is something you must experience for yourself if you haven't already. 

    As for the salad, you can make it in one pot and uses common ingredients so you can whip this up anytime. You can also add/subtract ingredients to suit what you have on hand or to suit your taste. I love versatility and this salad allows for that. I know you will be fond of this combination and hope you put it on your must try list. It's a nice fruit fall salad...and a keeper! 

    Lot's of flavor, texture and simple deliciousness in every bite. And, it's 100% percent good for you!

    APPLE HARVEST QUINOA SALAD + SWEET TAHINI DRESSING

    Ingredients
    • 1 cup quinoa (I used tri-color)
    • 1 3/4 cup water
    • 1 lemon, juice of
    • 2 large apples, cored and diced (1 green + 1 red pref.)
    • 1 1/2 cup grapes, sliced in half (I used red & green)
    • 1 stalk celery, thinly sliced
    • 1/4 cup raisins
    • handful chopped almonds
    • a few large mint leaves, julienned
    • 1/2 teaspoon cinnamon, or to taste

    Sweet Tahini Dressing
    • 1/3 cup tahini
    • 1/4 cup water
    • 2 tablespoons pure maple syrup
    • 1/2 teaspoon cider vinegar, or to taste (optional)

    Rinse your quinoa in a fine mesh sieve. In a medium size pot, add water and quinoa, bring to a boil. Cover, reduce heat and simmer for 15 minutes. Remove cover and let set 15 minutes, fluff with a fork.

    While quinoa is cooking, prepare your dressing by combining ingredients in a small bowl. Mix well and set aside to let the flavors relax into each other. Add more water, 1 teaspoon at a time, to thin as needed. To thicken add more tahini. It should be thin enough to drizzle. Dressing serves four.

    Core and dice apples, top with lemon juice and toss gently (I did this right on the cutting board to not dirty up another bowl). Prepare the remaining ingredients. Add the apples, grapes, celery, raisins, almonds, mint leaves and cinnamon to the quinoa, mix well. Taste for flavor adding more cinnamon if you like.

    Spoon into serving dishes and serve with a good drizzle of the sweet tahini dressing. Serves 4 - 6

    Notes: 

    I used 1 granny smith and 1 fuji apple. Feel free to use your favorite apples.

    This recipe is just a template...feel free to sub in unsweetened cranberries for the raisins (I use raisins because they contain no added sugars and I can find organic ones easily). Opt to leave the celery or grapes out using just apples (or use any combo you like). Add in a grated carrot for more color. Add more cinnamon if you like. Try using pecans instead of almonds. Try serving with some leafy greens. Have fun playing around with this making it your own.

    Store at room temperature if eating within a few hours or store in the refrigerator until ready.

    Sesame Quinoa with Tofu

    Sesame Quinoa with Tofu

     This is one of those recipes that surprises you. At first I thought this wasn't going to be one of my most flavorful dishes but I was in fact pleasantly surprised. It's full of flavors! I didn't change much from the original recipe. I only added a dash of garlic powder, cayenne and upped the green onion amount. This is a minimalist ingredient list that really packs great flavor and nutrition. Tofu, quinoa and sesame seeds are all excellent foods for healthy happy living. Also makes for great left overs too..if there is any. This recipe comes from my Cooking Light Annual Recipes Book dating back to 2003. I have a collection of these and will be posting recipes from these here and there. 

    Sesame Quinoa with Tofu

    Sesame Quinoa with Tofu

    Ingredients

    • 8 ounces firm or extra firm organic tofu, drained and pressed
    • 1 tablespoon sesame oil
    • 1 tablespoon sesame seeds...white, black or both
    • 1/2 teaspoon of garlic powder
    • 1 tablespoon tamari, bragg's amino's or soy sauce
    • 1 cup uncooked quinoa (I used tri-color)
    • 1 1/2 cups veggie broth or water
    • 1/4 teaspoon himalayan salt, or as needed
    • 1/2 to 3/4 cup green onions, chopped
    • 1/8 teaspoon black pepper or cayenne pepper


    Place tofu on several layers of heavy-duty paper towels or dish cloth, let stand 20 minutes. Cut into 1/2-inch cubes.

    Heat oil in a medium saucepan over medium heat. Add tofu, seeds and dash of garlic powder, saute 3 minutes. Remove tofu from pan and set aside. At this point, I sprinkled some tamaari on top of my tofu for extra flavor.

    In same pan, add quinoa and cook 3 minutes, stirring frequently. Add broth and salt, bring to boil. Cover, reduce heat to low and simmer 15 minutes. Remove from heat, uncover and let set 15 min to soak up the rest of the water. Fluff with fork, add tofu, onions, soy sauce and pepper. Serve.

    I lightly steamed some broccoli to serve with mine. I topped with cayenne pepper because extra spice is nice. A little sriracha or red pepper flakes would also be great. You could easily saute an extra vegetable with the tofu too. Or add spinach, fresh basil leaves or anything else that sounds good or is on hand.

    Planning ahead, if your gone for the day but want to make this at night. Drain tofu and let it set in the fridge between heavy duty paper towels or dish cloth, it will be ready when you get home so you can have a meal within 30 min or so.

    Quinoa + Hemp Heart Tabbouleh

    Tabbouleh is a popular traditional Middle Eastern dish. The ingredients remain the same but vary in ratio depending on the region. It traditionally uses bulgur wheat as the grain of choice but here we are using gluten free quinoa. I also added some hemp hearts as they are a perfect accompaniment and add extra nutrients, like all the very important omegas. What I really love about the quinoa and hemp hearts is that they are both complete proteins making this a well-balanced dish. If your new to hemp seeds and oil, following is a great article on just how wonderful and beneficial these seeds and oil is for your health: Hemp Seed - The Most Nutritionally Complete Food Source in the World

    Quinoa + Hemp Heart Tabbouleh

    I have been wanting to make this for some time now and am so glad I finally did. It was light, fresh and delicious! The ingredient list is simple and comes together creating pleasure for all your senses...visually, texturally and flavor wise. Not to mention the smell is delicious too. The mint and parsley together are a winning combination leaving a fresh, clean taste bite after bite. The cucumber is refreshing, the tomatoes add juiciness and the lemon adds a nice light zestiness. After making this I have to admit that I sat and ate the whole thing...of course I only made half of the recipe you see here which is why I doubled this recipe so you can have some for later, or share if you like. This is clean eating and nutrient dense. For those of you who count calories, when you learn to eat clean like this you don't need to count calories...eat as much as you like and count your blessing instead! 

    Quinoa + Hemp Heart Tabbouleh

    It's just pure and simple...

    Quinoa + Hemp Heart Tabbouleh 

    Ingredients
    • 1 cup quinoa (I used tri-color)
    • 1 3/4 cups water
    • 1 teaspoon garlic powder
    • 1 bunch parsley (about 2 cups lightly packed), stems removed
    • 1 small bunch mint (about 1 cup lightly packed), stems removed
    • 1 English cucumber (skin on), diced
    • 1 small red onion, diced or 3 green onions, thinly sliced
    • 1 1/2 cup cherry/grape tomatoes, halved or quartered depending on size
    • 1/4 cup hemp hearts (shelled hemp seeds)
    • drizzle of good extra virgin olive oil 
    • juice of 2 large lemons
    • mineral salt & cracked pepper to taste

    Rinse your quinoa in a fine mesh stainer to remove any dust (sometimes I do this, sometimes I don't). In a medium size pot, bring water, quinoa and garlic powder to a boil, cover, reduce heat and simmer for 15 minutes. Remove from heat, remove cover and let set for 10 - 15 minutes, fluff with fork.

    In the meantime, finely chop your parsley and mint. Dice your cucumber, tomato and onion.

    Once quinoa is ready, add in the parsley, mint, cucumber, onion, tomatoes, hemp hearts, drizzle of olive oil and the juice of your lemons, salt & pepper to taste, gently mix together.

    Serve with a few whole mint and/or parsley leaves and lemon wedges.

    Serves three generously.

    So clean & healthy...any day is a good day for tabbouleh!

    Blackened Tofu, Stir Fried Kale & Quinoa


     My new favorite way of eating kale is stir frying it in my wok. I actually crave this stuff and make a whole bundle and eat it all by itself for dinner. I know I eat a lot of things some people would think is weird but this is really delicious in my book! I also know many of you who have a love of kale will just love this stir fry. For tonight's dinner I decided to serve it with some blacken tofu....now we're really cooking! Blackened tofu, kale and quinoa....I'm loving these Superfoods. :)

    Let's begin with the kale...the king of the leafy greens!


    Stir Fried Kale

    Ingredients
    • kale, I used 10oz organic package from Trader Joe's
    • 2 tablespoon of nutritional yeast, fine ground
    • 1 teaspoon garlic powder
    • 2 tablespoons sesame oil
    • salt to taste
    • sesame seeds to garnish

    In large wok or saute pan heat oil on medium high. Add kale and stir fry for about a minute. Sprinkle nutritional yeast and garlic powder over top, turning and moving the kale around to get all the spices mixed well throughout the kale. Continue stir frying for another four to five minutes. You may leave a cover on for a minute here and there in between stir frying to help soften the kale. When kale turns bright green it's about ready to be removed from heat. Test a piece and see if it's too your liking, if not stir fry a little longer. Some may like it crisp and some may like it softer. Serve with a sprinkle of sesame seeds on top.

    On to the blackened tofu that was such a nice accompaniment...


    Blackened Tofu

    Ingredients
    • one block firm or extra firm organic tofu
    • 2 tablespoons tamari, bragg's liquid amino's or soy sauce
    • 1 tablespoon sesame oil

    Spice Blend
    • 2 teaspoons paprika
    • 1 teaspoon black or white pepper
    • 1 teaspoon cornstarch
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon thyme
    • 1/8 teaspoon cayenne pepper

    Open and drain tofu. Slice tofu into slabs, whatever size you prefer. Press tofu between paper towels or cloth to remove excess moisture. In a shallow dish place tofu and tamari, bragg's or soy sauce and let set a few minutes, turn after a few minutes to let the other side soak.

    In medium size bowl, combine all spice blend ingredients and mix until blended. This is fairly spicy so you may consider using less black pepper and/or cayenne.

    In saute pan, heat oil on medium high heat. Place tofu pieces in spice blend, press gently to get a good coating, turn and repeat on the other side. Place coated tofu onto saute pan and cook a few minutes on each side. They will  blacken nicely as they should and be so tasty! Serve with quinoa, rice, kale or anything that calls to you. Serves four. I used half a block and kept the spice measurements the same.

    Let's do some quinoa, another Superfood! I finally got the right way to cook it that I like...


    Quinoa

    Ingredients
    • 1 cup quinoa, I used tri-color from Trader Joe's
    • 1 1/2 cups water
    • 1/2 teaspoon garlic powder
    • salt to taste

    Rinse your quinoa under cool running water for about a minute or two to remove any dust. If you forego this step your quinoa will have a bitter taste. Well worth the step. In medium to large pot add quinoa and water, bring to a boil. Cover and simmer for 15-20 min. Once done stir and let set for 10 minutes uncovered to rest and soak up any excess water. Stir once again before serving. It will be a perfect quinoa, fluffy and sprouted.

    I love quinoa, it can be eaten alone or served with so many other veggies and fruits. Season for the dish you are serving it with, or don't use any seasoning at all...it's really good all by itself. The other day I had some left over quinoa and black beans in the fridge and decided to mix them together and serve it cold with lots of strawberries in the mix....sounds weird but it was so good!     I haven't done a veggie burger in almost a year. It was time to add a new one to the list and this one is as delicious as it gets. These patties are loaded with protein and fiber as well as other beneficial nutrients, and they are very filling. As far as veggie burgers go this is fairly easy. I have to admit that I'm a pretty lazy cook and don't like a lot of steps. I prefer to spend as little time as possible preparing a meal as well as cleaning it up. Fyi, you can make this recipe even simpler by using a pre-made flour instead of processing oats like I did. The patties came out fantastic and held up great without falling apart, and they were not dry at all, nor were they mushy. The texture, taste and visual appeal all hit the mark. Once layered with all the extra goodies this burger was supreme and the best veggie burger I've ever had...am I biased...maybe, but these were divine! And, if you don't feel like having it on a bun, by all means top your veggie burger on a bed of fresh leafy greens with a squeeze of lemon, some avocado, salt and pepper...so good just like that!

    I loaded this beauty up with leafy greens, slice of heirloom tomato, sliced red onion, whole grain mustard, mashed avocado and a nice drizzle of sriracha. Lot's of flavors going on and I loved it. As the saying goes, "Eat like you mean it!"

    Quinoa & White Bean Veggie Burger

    Ingredients (makes four patties)
    • 1/2 cup quinoa (I used tri-color)
    • 1 cup water
    • 1 teaspoon garlic powder
    • 3 teaspoons thyme, divided (oregano would be good too)
    • 1/2 - 1 teaspoon smoked paprika 
    • 1/2 teaspoon ground chipotle pepper, optional
    • 1 can (15 oz.) white beans (I used cannellini), drained and rinsed
    • 1/2 cup corn, fresh or frozen (about 1/2 fresh corn off the cob)
    • 1/2 cup red bell pepper, finely diced (about 1/2 bell pepper)
    • 1/2 cup shallot, finely diced (about 1 medium) or red onion
    • juice of one lemon
    • 1/3 cup oat flour, or flour of choice 
    • 1 Ener-G egg replacer or 1 flax egg (1 Tbs flaxseed meal + 3 Tbs water), optional*
    • mineral salt & cracked pepper, to taste
    • coconut or olive oil, to grease

    To Serve:
    • tomato, sliced
    • leafy greens
    • avocado, sliced or mashed
    • red onion, sliced
    • whole grain or dijon mustard (hummus or vegan mayo is great too)
    • sriracha or Sriracha Cashew Cream (use the sriracha cream in place of mustard)
    • burger buns of choice

    Start by making your flax egg or ener-g egg replacer and set aside. If baking in the oven, turn oven to 375 degrees F. (It's helpful to read instructions first before making the patties)  

    In a medium pot, bring water, quinoa, garlic powder and 1 teaspoon thyme to a boil. Cover, reduce heat and simmer for 15 minutes. Once done, remove cover and let set for 10 minutes.

    While quinoa is cooking, prepare your corn, shallot and red pepper. Be sure to dice your onion and red pepper fairly fine, they should be about the same size as the corn kernels.

    Next, mash your beans. I mashed about 3/4 of the beans leaving a quarter of the batch whole or somewhat whole.

    Once quinoa is ready, add the quinoa to the beans along with the shallots, red pepper, corn, remaining 2 teaspoons thyme, smoked paprika and optional chipotle powder and lemon juice. Mix well. Add in the flour and egg replacer, mix well again. Season to taste with salt, pepper and more of the other spices. We all vary on how strong we like our spices...you can't take out but you can always put in.

    Now to divide and make your patties. I like to pat my mixture into the bowl a little and divide it with a knife into 4 sections, making a plus sign if you will. Take each section and pack it tightly into a ball in the palm of your hands. It should be about the size of your hand. Flatten with your palms and place on hard surface. Cup the edges with your palms and tighten them in a bit and flatten the top to the desired size. Mine were about 1/2 inch thick by 3 1/2 - 4 inches.

    Cook one of two ways:

    In the oven at 375 degrees on a greased or parchment lined cookie sheet for 30 minutes, turning once after 15 minutes. I also added a sprinkle of himalayan salt to the top before baking.

    OR

    In a large skillet, heat 1 tablespoon coconut oil or olive oil over medium to medium high heat. Cook patties about 4 - 5 minutes on each side.

    I cooked both ways and had no preference. They both held up well and cooked great. (pic shows skillet cooked)

    Serve on bun or bed of leafy greens with choice of toppings!

    Notes:

    The patties can be made ahead of time and stored covered in the refrigerator for a couple days prior to cooking.

    *I have a sneaky feeling that this can be made without the use of any egg replacer if you don't have it available. I have it here for good measure until I try without (in the comments you will see that it has been done). If you decide not to use an egg replacer, when adding the flour, just try adding two - three tablespoons of water instead if needed...the amount may depend on the flour you're using.

    For mashed avocado, cut open avocado, remove seed and using a fork, mash the flesh right in the skin...it's like a bowl. Spread on bun for a great creamy condiment!

    Can I interest you in some roasted cauliflower? Or maybe some roasted chickpeas? These are both just about the greatest thing ever...at least in my book they are! Pair them with this mustard dressing and you've got yourself another simple dish that is sure to please. I love all the ingredients in this recipe but have to admit that once I put the mustard dressing together, I wasn't so sure if it might have too strong of a mustard flavor. I was pleasantly surprised to find that once the dressing was mixed with the roasted chickpeas and cauliflower it mellowed out immensely. This has ended up being a new favorite dish of mine for ease of preparation and great flavor. It is also a complete meal with the addition of quinoa that adds extra protein and fiber so you can be sure you are getting what you need from your plant based diet. Try adding in some brussels sprouts as well for a nice variation. 

    The recipe was first spotted within the beautiful blog photos from Bluebird and originates from Gwyneth Paltrow's and Julia Turshen's cook book, It's All Good. A quick google search gave me the ingredients and more inspiration to put this together.

    Gather your ingredients and begin...

    Start by preparing your chickpeas and cauliflower for roasting...roast for 45 minutes.

    In the meantime, prepare your dressing and cook your quinoa. Just a note about the dressing, I chose to use lemon instead of white wine vinegar like the original recipe called for. I also sought out a Dijon mustard that didn't use white wine vinegar. My reasoning is that white wine may or may not be a vegan product as many use animal remnants in the production. After searching on the shelves I found this great Dijon mustard from Maille that doesn't use any white wine vinegar in the ingredients, just vinegar. And as luck would have it, it is an award winning Dijon mustard! Win, win. And the lemon in the dressing to me was just perfect!

    Once chickpeas and cauliflower are ready...toss with the mustard dressing and serve over a bed of quinoa. Simply wonderful!

    Ingredients
    • 1 can (14 oz) garbanzo beans (chickpeas), rinsed, drained and patted dry on a kitchen towel
    • 1 large head cauliflower, cut into florets
    • olive oil
    • mineral salt
    • 1 cup quinoa (I used tri-color)
    • 1 1/2 cups water or vegetable broth
    • 1/4 cup fresh Italian parsley, chopped
    • fresh cracked pepper, to serve
    • lemon wedges, to serve

    Mustard Dressing
    • 1 tablespoon Dijon mustard
    • 1 tablespoon whole grain mustard
    • juice from 1 lemon or 1 tablespoon apple cider vinegar 
    • 1 - 2 tablespoons evo or olive oil

    Preheat oven to 400 degrees.

    Prepare cauliflower and chickpeas, toss together in a large roasting pan with 2 tablespoons of olive oil and dash or two of salt. Roast for 45 minutes, stirring every 15 minutes or so.

    In a medium pot, add quinoa, water and a pinch of salt. Bring to a boil, cover, reduce heat and simmer for 15 minutes. Remove cover and let set 10 minutes and fluff with a fork.

    In a small bowl, prepare your mustard dressing and set aside. You may like to double this recipe and have some to drizzle over top your plated serving.

    Once roasting is done, let cool a few minutes. While still warm, place cauliflower and chickpeas in a medium size bowl, add dressing and toss. Add in parsley last or top your portion when before serving. Tastes great warm or at room temperature.

    Serve cauliflower and chickpea mix over a nice bed of quinoa along with lemon wedges.

    Serves two with left over quinoa.
